The Turkish know it as Ayran but this popular beverage has many different names throughout the Middle East where it's origins can be found. Also known as Doogh in Persian this culturally shared drink can be found in Iraq, Iran, Armenia, Afghanistan and Syria. Simple to make it consists of a mixture of plain yogurt, cold water and salt with optional ingredients such as chopped cucumbers, cilantro, dill and even mint. It can be served with or without ice. Dolma is a common dish throughout the Middle East reaching the Balkans, Russia, and Central Asia and has many different varieties. It consists primarily of grape leaves or cabbage leaves rolled with rice, minced meat, grains and has spices and herbs mixed in. They can be made with meat or be made vegetarian in which case they are better served cold.
