Did you know that when you boil vegetables how you boil them is based on where they grew?

If the vegetable is grown above the ground like peas, beans, broccoli, brussel sprouts, cauliflower you are supposed to plunge them into already boiling water. Apparently because these vegetables don't take take long to cook this helps avoid overcooking which results in loss of colour, vitamins and losing their shape. Did you know this?

For vegetables that grow below the ground (and thus are harder) like potatoes, turnips, carrots, rutabagas, onions you start them in cold water and gradually let the water heat to a boil. This way they have a longer cooking time to soften and develop their flavours. Did you know this?
