I've read recently of the current trendiness of sweet potato toast; that is sweet potato slices cut lengthwise, (baked & later) toasted and used like toasted bread in that it forms the platform for toppings and condiments. In effect, this kind of sweet potato toast is the base for open face sandwiches. Have you ever eaten this type of sweet potato toast?

Before learning of the above-referenced type of sweet potato toast, I'd started making my own variant on the idea. I boil a sweet potato, toast a slice of bread, maybe spread some margarine or butter atop the toasted bread, then smash half of the boiled tuber atop the bread. I may top all that with some meat and/or fruit. It's like a sweet potato take on avocado toast. Have you ever eaten sweet potato toast of the kind I've been making?

Much as I'd like to try using sliced sweet potatoes as a bread substitute for toast, because of the disability affecting my left side, I don't trust myself to cut them raw and lengthwise. Would you be willing to suggest any means by which i could slice those 'taters without unduly risking cutting myself (my Tellwutter friends may privately message me here instead/also)?
