A vegan restaurant I enjoy regularly serves animal-free equivalents of African-American/Southeastern U.S. soul food dishes. But I'd long wondered whether chitterlings could be simulated that way. Yes. They. Can! That vegan eatery I patronize has yet to serve them, but during my latest visit there I saw a flier from a vegan soul food catering business advertising its Thanksgiving Day deals, among them being vegan chittlins. The lady responsible for the fare at the eatery seemed hesitant to prepare them for her patrons, but I remain intrigued. Original, non-vegan chitterligs/chittlins, which are pig intestines, are, in my experience, becoming increasingly difficult to find at soul food restaurants, so my excitement for then and a non-critter alternative may make me among a slim subsection of diners, Would or have you ever eat(en) either mammalian and/or vegan chitlins?

If you're at all familiar with vegan eating, you likely know that plant-based alternatives to what were originally animal-derived dishes are often given different names, likely to avoid anyone's confusion as to their ingredients' origin. The vegan caterers' referenced in the previous question call their faux chitterlings chitti-lings. They're called vitlins in a recipe for the same dish I found online. Even if you'd never eat pig innards or a tofu skin approximation of them, which name for the latter do you prefer?
