Pan-Fried Tuna Croquettes a popular Spanish Tapas: Ingredients 4-5 medium size potatoes (559gr) 2 TBSP cilantro or parsley (finely chopped) 2 TBSP onion (finely chopped) 1 can tuna in water (5oz / 142gr) 2 TBSP corn starch 1 egg Salt ½ tsp and pepper ½ tsp 1 egg for dipping croquette before rolling them in breadcrumbs Bread crumbs Oil for fryingInstructions -Cut the potatoes in half, and boil them until soft (about 15-20 minutes). -Smash them and add the finely chopped cilantro and onion. Add the tuna, corn starch, salt, pepper, and egg. Mix well. -Form the tuna croquettes (you can use an ice cream scoop). -Put the other egg in a bowl and mix it well. On another plate place the breadcrumbs. -Dip the tuna croquette into the egg and immediately into the bread crumbs. -Put them in a frying pan with the hot oil at a medium low heat.
