Speculoos is a spice cookie popular in Belgium and traditionally baked around the holidays for St. Nicholas Day, they are flavored with cinnamon, ginger, cloves, pepper and nutmeg. They would slather the cookies with butter and put them between to slices of bread and the cookies would turn to paste after a few hours in a warm lunch box sort of like a peanut butter consistency. Soon the Cookie Butter spread was made and is available in stores and is one of my favorites. Have you ever tasted Speculoos? Yes

We Americans may be more familiar with the brand name of Biscoff for the cookies. The first time I tasted one of these cookies was on a Delta Airlines flight and I have been hooked ever since. Were you ever served these cookies on a Delta flight? Yes
