Sharing a bit about my trip to Vietnam, and I'll start with the food!

Vietnam has the lowest obesity rate in the world, and after spending a few weeks there, I know why. First off restaurant meals are incredibly cheap, often costing less than $2 for a meal. Their diet is naturally rich in fiber, lean proteins and fermented foods and boost gut health. Meals are light, balanced and packed with fresh vegetables, herbs and minimally processed ingredients. Breakfast foods in Vietnam are very different than in North America. They are typically savory, steaming, and quick, featuring noodle soups like Phở bò (beef noodle soup), Bánh mì (crispy sandwiches), and Xôi (sticky rice). Other common, fast, and light options include Bánh cuốn (steamed rice rolls), Bánh mì ốp la (fried egg sandwiches), Cháo (rice porridge), and Cơm tấm (broken rice). Eat your vegetable! Here in Vietnam, it's super easy, since fresh vegetables and herbs are always served with every meal. Common vegetables include morning glory (rau muống), banana flower, and bean sprouts, often served raw, pickled, or stir-fried. Vegetarianism in Vietnam is deeply rooted in Mahayana Buddhist traditions, focusing on compassion, karma, and spiritual purification. Many Vietnamese Buddhists practice partial vegetarianism, especially on the 1st and 15th days of each lunar month. Known as "ăn chay," this diet features fresh ingredients like tofu, mushrooms, and vegetables. Vegetarian restaurants in Vietnam are everywhere, and there are lots of options in meals.
