In case anyone here is unc.lear on what an omelet is, per Dictionary.com, it's "eggs beaten until frothy, often combined with other ingredients, as herbs, chopped ham, cheese, or jelly, and cooked until set."

I don't enjoy eating eggs, at least in so far as they're recognizable as eggs that aren't beaten into a recipe requiring them, at all.

Some years ago, the man in charge of making food for a men's breakfast at my church introduced to me the concept of the bag-&-boil omelet. Instead of frying the eggs/substitute and folding the filling(s) into them, everything is placed in a sealable, plastic sandwich bag, shaken up and placed in boiling water until hardened. Is this idea appetizing to you?

In the omelet I'm boiling as I compose this survey, I've included three eggs with most of their yolk, crumbled pork rinds (one each of five flavors), canned black beans, a pinch of pink Himalayan salt, jarred small asparagus spears, jarred minced garlic, finely-chopped hot giardiniera (an Italian vegetable relish), pesto, ground horseradish, and a shake of bottled Parmesan cheese. Would that make a mouth-watering omelet for you?

Some of those ingredients appeal to me, but not all (and I may want to use fresh ingredients for at least some of them).

If you eat omelets, how about sharing what you like to put in yours (all the fillings you like don't have to be in the same omelet)?
Yes, I'll share.
