I live in Florida. It does freeze in Florida, but not very often. If you happen to catch us on the wrong week, you will be mad that you spent money in search of the sun and brought light clothing only to go shopping for the warm clothes you left at home. However, the odds are in your favor in December, January, and February. Avoid coming during the summer because summers are hellish here.

Of all the all-inclusive resorts I've been to, my favourite is Grand Sunset Princess in the Mayan Riviera of Mexico. The Grand Riviera Princess is the other half of the resort, so equally good. Splurge the extra to get the swim up room, so worth it.

El Salvador is beautiful, but you really need to know how to speak some Spanish. They will try to speak English to you, but it's not the same when you understand what you are reading (menus, directions, etc). It is especially great if you surf. I don't but like to watch people doing so.

If you do decide to come here, the winter months are the most popular for tourism with the exception of the Orlando area, where I live because our biggest attractions are the theme parks, which are busiest during school closures over Christmas, spring break and summer school breaks with the peak of those being the 4th of July.

Most "off the beaten" path destinations are that way because of one or more of these things: 1. expensive to stay at 2, expensive to get to 3. Lacks services and infrastructure 4. I went on a solo trip to Mazatlan Mexico, which is the only place in Mexico the Canadian government states is safe in Mexico. I did day trips and saw real Mexican towns, tequila distillery which showed the old way of making tequila. I walked the streets during the day and felt safe. I know you didn’t want Mexico, I didn’t find it touristy.

You might consider the Canary Islands but they are not that warm and while North Americans don't go there so much they are flooded with Europeans in winter.
